Taiping Houkui

Known as the traditional Chinese green tea, Taiping Houkui derived from Taiping County, Anhui Province. As early as 1859 in the Qing Dynasty, there was a tea farmer lived in Taiping County called Wang Kuicheng, who was an expert in tea processing. He changed the traditional production method in order to improve the quality of tea. Later, he successfully produced high-quality tea in Hougang and gradually become famous. That is the story of Taiping Houkui.

The time for picking Houkui tea starts from the Grain Rain and ends at the Start of Summer, which lasts for more than 20 days. The picking and preparing processes of fresh tea leaves are very strict, and the most important step is "four times screening". Firstly, choose a tea mountain with great growth condition. Secondly, choose Shida tea tree that growth well. Thirdly, select the branches which are strong, healthy, and no pests. And finally, take two or three tea leaves from each bud. The making process of Houkui tea includes 6 steps, picking fresh leaves, selecting tea leaves, spreading out, fixation, baking and vatting. The production technique of Taiping Houkui was listed in the Chinese national intangible cultural heritage project in 2008, and Fang Jifan is its representative inheritor.

The standard features of Taiping Houkui is one bud surrounded with two leaves, flat and straight, and natural stretch. After brewing, tea soup turns into green and clear with fresh and mellow aroma. And tea leaves are gradually stretched and keeping upright in the soup and just like orchid. Houkui tea contains over 500 kinds of chemical components, with anti-bacteria, loose weight, prevent caries and inhibit cancer cells.
